Ingredients
  • 1 kg Grilled Eggplant
  • 220g tahini
  • 15g salt
  • 15g lemon salt
  • 270ml iced water
Preparation
  • Grill the eggplants on charcoal and then wash
  • Cut eggplants into thin slices and gradually add the tahini
  • Add both salt and lemon salt followed by iced water
  • Mix well and refrigerate

Topping

Ingredients
  • 180g of the prepared Moutabal mix
  • 30g eggplant
  • 10g walnut
  • 2g parsley
  • 5g fresh pomegranate
  • 2g fresh mint
  • Drizzle of pomegranate Molasses
  • Drizzle of olive oil
Preparation
  • Cut the eggplant into cubes, deep fry and dry out the oil

Octopus Salad Recipe

Ingredients
  • 1 full octopus
  • 300g cherry tomato
  • 100g black olives
  • 20g pine nuts
  • 4 basil leaves
  • 60g rocket leaves
  • 1 carrot
  • 1 onion
  • 1 tomato
  • 2 lemon
  • Extra virgin olive oil
  • Salt
  • Pepper
Preparation
  • Start preparation by first boiling a big pot of water.
  • Wash, peel, and cut a carrot, tomato and onion into big pieces and add to the water. Cut half a lemon, squeeze the juice into the water and add 2 whole pieces of lemon to the water.
  • Once the water starts boiling, add the octopus. Cook time is approximately 30 to 45 minutes, depending on your preference for a hard or soft textured octopus. Check the texture by piercing one of the tentacles with a knife.
  • Once the octopus is almost ready, prepare the salad. Cut the cherry tomato into 4, slice black olives, add the pine nuts and rocket and mix. For the dressing, mix lemon, salt, pepper and olive oil as per desired taste.
  • Remove the cooked octopus and cut the tentacles into round slices.
  • Arrange the salad on the plate, add the octopus slices, add dressing, mix well and serve in a dish.
  • Garnish with basil leaves.

Ingredients
  • 1kg Braising steak or Topside
  • 250g onions
  • 5g salt
  • 2g pepper
  • 25g tomato paste
  • 75g Demi-Glace powder or Bisto
    (in case Demi-Glace powder is unavailable)
  • 1L beef stock
  • 1-2 bay leaves
  • 30g chopped garlic
  • Flour to dust beef
  • 1-2 puff pastry
    sheets
  • 1 egg (whisked)
Preparation
  • Dust the diced beef with seasoned flour and sauté in a pot until golden. Set on a kitchen paper to drain the oil, then place the beef in an oven-proof pan.
  • Next, sauté onions in the same pot. Once golden-brown, transfer into the oven pan with the beef.
  • Add garlic and tomato puree to the sauté pot, cook for 1 minute, then slowly add the stock. Stir continuously to try and lift the fond from the bottom of the pan.
  • Next, add the stock mixture to the beef, ensuring the meat is fully covered (use additional water if required). Add bay leaves and bring to a boil. Once it begins to boil, place the pan in an oven at 175C for 2.5 hours, checking and stirring occasionally.
  • Once done, check the sauce for thickness and flavour. If too thin, use a little Demi-Glace powder to thicken and check seasoning.
  • Then top with puff pastry and brush with egg wash. Cut a few slits in the surface and bake for 30 – 35 minutes until deep golden and serve while piping hot!

  • 6g active yeast

Preparation
  • Whisk all the ingredients in a bowl and set aside to rest to ferment for 10 to 15 minutes.
  • Then beat the mixture in a bowl with the palm of your hand to combine and fluff the batter.
  • Pour the batter into a squeeze bottle to pipe out.
  • Next, heat oil in a deep pan. Once heated, pipe the mixture into the oil as a spiral, as per the desired size.

5 Common Health Problems In Ramadan

With the Holy month of Ramadan upon
us, our daily routines undergo changes that haven’t been done for at least a
year. These changes require getting acclimated to and may be slightly
discomforting. Our bodies are incredibly adaptable and always seek homeostasis
for normal functioning. However, the acclimatization process can take days or
weeks, depending on the individual.

With this blog, we try to address some of the common health issues faced in Ramadan. The list is as follows.

1. Headaches

Headaches are caused by a variety of
reasons, some of which could be low blood sugar levels, low water levels,
insufficient sleep or stress – apart from the ones due to cold, flu or sinus. Ramadan
coupled with quarantine does have an effect on our sleep schedules.

How to get rid of a headache?

What helps: Make sure you get ample sleep, at least 7-8 hours every day. Be sure to eat healthy foods and drink enough water from iftar to suhoor. However, If the headaches persist for long hours, increase in severity or turn into migraine, please seek professional medical help.

2. Indigestion and Heartburns

Another common occurrence. Indigestion symptoms may include unusual stomach noises, pains in the abdomen or just frequent trips to the washroom. All these are usually due to over-eating or eating a lot of oily, spicy or fatty foods.

How to cure indigestion fast?

What helps: A balanced diet definitely helps and avoiding these foods in large quantities, especially while breaking fast. Pace your meals so the digestive system isn’t burdened. Laban and yoghurt are effective cooling agents that soothe the digestive tract. If the pains are severe and frequent, please seek professional medical help.

3. Dizziness (Light-headedness)

To simplify, this is a feeling of
drowsiness and dizziness during the day. It can also happen when suddenly
waking up or quickly standing up from a stationary position. The probable cause
of this can be narrowed down to fluctuating blood pressure, low blood sugar
levels, low water levels or iron deficiency. If you have a case of anaemia, the
condition may be aggravated while fasting.

How to stop feeling dizzy?

What helps: As mentioned before, make sure you get ample sleep, at least 7-8 hours every day. Drinking enough water and a healthy diet are effective measures. Including high-iron sources like legumes, leafy greens such as spinach, or red meat might help keep anaemia at bay. Please seek medical help if the condition persists for days or worsens with time.

4. Mood swings

During Ramadan our bodies are not just dehydrated but also experiencing hypoglycemia (low blood sugar). This can sometimes lead to feelings of irritability, frustration, and anxiety, which can exacerbate mood swings and cravings.

How do I stop mood swings when fasting?

What helps: The effects of exercise are not to be underestimated, courtesy post-workout endorphins that are responsible for that rejuvenated, ‘on-top-of the-world’ sensation. Keep yourself hydrated and food will be the last thing on your mind. Get enough sleep. You must rest about 6-8 hour per night you are fasting. Get a good quality vegetable broth or bone broth. 5. Falling Sick

Consuming cold drinks while breaking
the fast or a low immunity might be to blame for this one. Fasting through the
day causes the body to go through minor physiological changes, often resulting
in elevated body temperatures. Sudden consumption of cold drinks at Iftar often
results in cold, cough and occasionally fever.

What helps: To strengthen the immunity, include vitamin C-rich foods in your diet. Although this is common, it also is a very precarious time to be falling sick and would be highly advisable to get a check-up done as soon as possible in light of the current pandemic.

To sum it all up, the following 4 aspects will help keep the majority of health problems at bay – A healthy diet, regular exercise, ample sleep, and balanced mental health.
